Roasting
Roasting is a critical point in the coffee making process, since it is at this stage that the aromas and flavors absent in the green bean develop.
Each coffee responds differently to identical combinations of time and temperature. That is why specific roasting profiles are defined that allow us to extract the desired properties for each of them. Just as the taster identifies the attributes of a coffee, it is the master roaster who must express them in the roast.
